Ru Liu is a first-year PhD student in Community Nutrition from Liuzhou, China. She earned her MS and BS in Nutrition and the Registered Dietitian credential from the University of Illinois at Urbana-Champaign. Her current research interest focuses on the socio-economic, environmental, and cultural determinants of dietary patterns and diet-related diseases in marginalized populations, particularly racial and ethnic minorities. Ru’s current work uses mixed methods and follows community-based participatory research principles to examine food insecurity and conceptualize nutrition security among New York state residents. She is also interested in evaluating the Policy, Systems, and Environmental components in food and nutrition assistance programs. Outside of work, Ru enjoys traveling, hiking, and spending time with her rescue dog, Oatie.
